Currently, 215 million tons of oils and fats are consumed on the planet (just over 28 kg per person per year). In Spain there is a demand for just under 1.2 million tons (0.55% of total world demand), which means a per capita consumption of over 25 kg. All this refers to data from 2018, according to a study on the segmentation of the Spanish oil and fat consumer market carried out by Juan Vilar Consultores Estratégicos.

However, Spain also allocates more than 1.5 million additional tons of oils and fats to the chemical and biochemical industry, especially for the production of biodiesel fuel, with palm oil being the main raw material.

By types of oils and fats, the distribution is as follows: 537,000 tons of olive oil (46 percent), followed by 342,000 tons of sunflower oil (29 percent),  190,000 tons of palm oil and palm kernel oil (16 percent), and the remaining 9 percent is vegetable and animal oils and fat.  Therefore, almost half of the oils and fats consumed in Spain correspond to olive oil, and sunflower oil comes in second when taking into account communities, industry and households.

When segmenting the market exclusively for the consumption of olive oil, households consume 347 thousand tons (65 percent), while communities and food industry demand 190 thousand tons (35 percent).

The stratification in the industry and the communities is as follows; the canning industry has more than 250 companies distributed throughout the national territory, and a turnover that exceeds 10 billion euros. Also, it consumes more than 30 thousand tons of olive oil,

The bakery, pastry and confectionery sector have just over 10,500 companies and a turnover of over 1.2 billion euros. They produce around 20,000 tons of olive oil.

As far as the hotel industry is concerned (hotels, tourist apartments, campsites, rural accommodation, hostels, etc.), there are more than 475 thousand companies, and over 2 million beds. They demand a little over 7 thousand tons of olive oil.

In regards to the food and beverage industry, that is to say, restaurants, bars, and other establishments, they almost account for 300 thousand establishments in total. Every Spanish person visits such establishments 170 times per year on average. In turn, they demand a grand total of 90 thousand tons of olive oils.

Finally, the agro-food processing industry, both animal and human, who has a turnover exceeding 15 billion euros, consumes just under 43 thousand tons of olive oil.
