This is the result of an analysis conducted by the International University of Andalusia, and the Grupo Oleícola Jaén, through the university classroom Oleícola Innova for Innovation and Dissemination in Olive Growing and Olive Oil Technology, created by agreement between the two institutions at the headquarters Antonio Machado de Baeza (Jaén).

The study was carried out by the international olive oil analyst Juan Vilar, Juan Carlos Marín, head of groceries at Alcampo, Juan Carlos García, chef at Restaurante Vandelvira, and Carmen Morillo, financial director of Grupo Oleícola Jaén, all members of the Oleícola Innova classroom.

As for the results, there is a decline in the category of refined oils other than olive oils (sunflower oil, corn oil, etc.) sales of 10.95%, where only has a sustained growth in volume. sold mixed seed oil, extracted from different oilseeds, also experiences a price increase of almost 19%, sunflower assumes a drop in demand for the period studied of 10.95%, and price of 26%.

As for refined olive oils, pomace grows in demand by 157.18%, and in price by 17.14%; as for intense and mild olive oils, the former increase in price by 50.2%, while the latter increase by 53.4%, in terms of turnover they grow respectively by 22.3% and 46.7%, that is, they all grow in demand, and in turnover. In terms of quantity of items demanded, demand per unit of product fell by an average of 6.6% in this category.

To conclude, in the category of virgin olive oils, demand grew on average by 33.01% in price and 25.89% in turnover, in all of them, both in absolute value and in quantity of product demanded, except in extra virgin olive oils of more than 1 liter, where the demand for quantity of product fell by 17.86%, while virgin olive oils also grew in demand, turnover and price, by 36.5%, 41.57% and 93.32% respectively.

Therefore, the consumer of olive oils is being less generous in the use of the product, buying in smaller format, but more frequently, and in turn has slipped down the range of the family of products, but do not try to leave the category of olive oils, hence the growth of pomace.
